The New Normal / COVID-19

Hi friends,

Wow. How things can change in a matter of weeks. The last time I posted here, the Coronavirus was a distant threat, something I was preparing for in the sense of, “oh, I should probably add a few extra dried goods to my grocery list just in case” not in the “this is an imminent threat,” kind of way. Fast forward two weeks and our kids are all home from school, offices are shuttered, restaurants and bars are closed, there’s a tristate curfew, and we’re all beginning to understand that the risk to go out is too great.

I know cooking will be challenging in the coming weeks. I know nerves are frayed because we’re working from home while trying to educate our kids. And in the midst of it, we’re trying not to panic (easier said than done some days). So, I’m going to try to keep this space a positive one. I’ll still be sharing recipes (since we’re all pretty much home cooks now!) and I’ll focus heavily on goods you can find in your pantry. I’m also working on a post about how to optimally stock your pantry and freezer because at some point, we will need more groceries.

For me, I’m taking things one day at a time, and sometimes hour by hour. I feel fortunate that Brian is working from home, that my kids are here with me, and that we are in the position to stock up on enough food. My heart hurts for those who are suffering under far worse circumstances.
