Hi.

Hi! I’m Nicole. I’m the mama of two sweet littles, the wife of a great guy, and a former event director at Brides Magazine. But because no one can be defined by any one thing, I’m letting a few of my other interests do some of the talking: cooking, photographing, writing, baking, aspiring, planning, dreaming.

Hi friends! Sorry for the hiatus (again). This second pregnancy is kicking my behind. And if you follow me on Instagram, you’ll know that I’m also working on a blog redesign that will make it easier to find my recipes AND you’ll be able to sort by meal for inspiration! Plus, I’m raising a toddler. So it’s been busy around here.

The good news is that I’m back with my favorite turkey burger recipe just in time for Memorial Day Weekend! These burgers pack a flavorful punch and are loaded with lean turkey, healthy spinach, and delicious aromatics. Topped with chipotle mayo, avocado, and red onion, they’re so yummy you won’t even miss regular beef patties. And while they’re definitely easy enough to make on a weeknight, I think they’re especially perfect for the first unofficial weekend of summer. Be sure to serve them on classic potato buns alongside spicy oven fries and a fresh green salad, and you’ll be kicking this summer off on a high note!

P.S.—If you’re making the “fries,” get those in the oven first as they’ll take about 40 minutes to cook. The burgers only take 10-12 minutes!

  • Makes: 6 burgers, 4 servings fries

  • Prep Time: 20 minutes for burgers, 10 minutes for fries

  • Cook Time: 10-12 minutes for burgers, 40 minutes for fries

Burger Ingredients:

  • 4 cups baby spinach, roughly chopped

  • 4 scallions, thinly sliced

  • 1 garlic clove, minced

  • 1 pound ground turkey

  • ½ teaspoon ground cumin

  • 1 teaspoon salt

  • ½ teaspoon pepper

  • 2 tablespoons olive oil

  • Potato buns

  • ½ cup mayonnaise mixed with 1-2 tbsp chipotle hot sauce

  • ketchup

  • red onion, thinly sliced

Burger Directions:

In a small pan, heat olive oil over medium heat. Add scallions and sauté until soft, about 3 minutes. Add garlic and cook for 1 minute more. Remove from heat and let cool.

In a large bowl, mix turkey, cumin, salt, pepper, spinach, scallions, and garlic. Form burger patties, 6 in total.

Fire up your grill and cook for 10-12 minutes, flipping once. Burgers are done when turkey is no longer pink.*

*If you don’t have a grill, you can cook these on a griddle pan on your stove.

Serve with potato buns, red onion, chipotle mayo, and ketchup.

Oven French Fry Ingredients:

  • 4 russet potatoes, scrubbed and sliced lengthwise into fries

  • 2-3 tablespoons olive oil

  • 1 tablespoon garlic powder

  • 1 teaspoon salt

  • ½ teaspoon pepper

  • 1/8 teaspoon cayenne

  • ½ teaspoon chili powder

  • ¼ teaspoon paprika

Fry Directions:

Preheat oven to 400°. Toss potatoes with olive oil and spices. Spread fries onto two greased or silpat-lined baking sheets. Make sure not to crowd the fries—you don’t want them to overlap or they won’t crisp up. Bake for 20 minutes, then flip and bake for 15 more. Fries are done when they’re crispy and golden brown.
