Crispy Baked Chicken Tenders
Who’s tired of cooking in quarantine? Same. I’m not sure if it’s a cooking rut per se….maybe more of a “I don’t want to think of what to feed my entire family for breakfast, morning snack, breakfast two (why is this a thing?), lunch, afternoon snack, dinner, and (the inevitable plea for) dessert!!!” It’s draining, even for someone who loves thinking about food.
With that in mind, these Crispy Baked Chicken Tenders are here to save the day! They’re so simple, they’ll ease the mental load of menu planning. They’re excellent dipped in kid-friendly sauces or served over a salad. They’re delicious right out of the oven or reheated for later. Kids love them. Adults love them. They require very little effort and very few ingredients. In essence, these chicken tenders have been the heroes of our quarantine. And now they can be yours too.

Crispy Baked Chicken Tenders

Serves: 4 people
Prep Time: 10 minutes
Cooking Time: 20-25 minutes
Ingredients:
1.5 lbs. chicken tenders
1/3 cup mayonnaise
1 tsp. Dijon mustard
1 tbsp. honey
1 tsp. salt
1 tsp. garlic powder
1/2 tsp. black pepper
1/2 tsp. paprika
1/2 cup Italian-style bread crumbs
1/2 cup panko bread crumbs
Directions:
Preheat oven 425°. If you have them, set metal cooling racks on top of two baking sheets. Otherwise, line sheets with parchment paper.
Whisk ingredients mayo through paprika in a bowl. Combine bread crumbs on a shallow dish. Dip chicken tenders in wet ingredients first, then roll in the bread crumbs. Set the chicken on prepared baking sheets/racks, and bake for 20-25 minutes until cooked through. Serve over a salad or with preferred dipping sauces!
