Belgian Waffles
One of the best things about winter is the inherent coziness that comes with taking refuge indoors. On weekends, our family loves to brew a big pot of coffee, stay in our pajamas until late in the morning (even if we never truly get to sleep in anymore!), and have a big, homemade breakfast.
I’ve been making and eating the Belgian Waffles pictured above for as long as I can remember. (Seriously—my parents used to make these for every sleepover birthday party I ever had.) The recipe comes from one of my father’s cousins, and it is the only waffle recipe I make because it’s PERFECT.
The waffles are pillowy and tender inside, crisp on the outside, and have just the right balance of sweetness. We always top them with fresh fruit and maple syrup, and sometimes add whipped cream if we’re feeling particularly glutinous. Also—and this is my favorite feature of any given recipe—we always have every ingredient on hand.

Belgian Waffles
Yield: 8 waffles
Prep Time: 10 minutes
Cook Time: 20 minutes
Ingredients:
2 cups flour
2 teaspoons baking powder
2 tablespoons sugar
½ teaspoon salt
2 eggs, separated
5 tablespoons butter, melted
2 cups milk
2 teaspoons vanilla
Directions for the batter:
Beat egg whites in a stand mixer on high until stiff (very fluffy!), about 5-6 minutes. Meanwhile, mix flour, baking powder, sugar, and salt in a large bowl. Set aside.
Beat egg yolks, milk, and vanilla in a medium bowl. Add wet ingredients to the dry just until blended. Stir in the melted butter.
Gently fold in the egg whites—they will deflate slightly but be careful not to over mix. You want to see those pillowy clouds in the batter!
Cooking Directions:
Heat both sides of the waffle iron. Spray iron with cooking spray. Add batter to the center of the iron and close. Allow waffles to cook until golden on the side against the flame‚ about 2-3 minutes. Flip the waffle iron over and repeat. Waffles are done when they’re golden brown. (I often preheat the oven to 250° and put the waffles on a baking tray to keep them warm until they’re all done.)
